Sugaring Season

Above, Dana Bishop of Shelburne Farms explains how the evaporator works as sugaring begins. Every seven minutes a timer goes off, and more wood is fed into the evaporator to keep it hot enough.

Left, Bishop pours syrup after it’s been processed in the evaporator to remove water. Now it’s ready to be filtered and then it will be ready for pancakes.
