It’s fiddlehead season in Vermont, when folks take to the woods to gather the burgeoning, unfurled ferns from the forest floor. Many local restaurants pay handsomely for the fronds, which are sautéed and served up as a spring delicacy. But don’t blink. Fiddlehead season only lasts about a week.
